No Bake Energy Balls - Allergy Friendly!
Ingredients:
1 cup old-fashioned gluten free oats
1/2 cup unsweetened shredded coconut
3/4 cup natural peanut butter or 1/2 cup any other nut butter
1/3 cup maple syrup or honey
1/4 cup unsweetened cocoa powder
2 Tbsp ground flaxseed or chia seed
1 1/2 tsp vanilla extract
1/2 cup Vegan chocolate chips
Directions:
In a bowl, combine peanut butter, syrup, cocoa powder, flaxseed, and vanilla.
Add oats and coconut, (and chocolate chips or any other additions!)
Scoop mixture into 1″ balls and roll out to smooth. Place in an airtight container in the refrigerator and store up to 1 week. (You can also freeze these up to 1 month)
