Recipe: Smoked Salmon Pasta

Ingredients:

  • 6-8oz salmon

  • 1 box chick pea pasta

  • 1 cup cut spinach

  • 2 tbsp oil (coconut or olive)

  • 1 tbsp dill weed

  • 1 tsp onion powder

  • 1 jar capers (drained)

  • 1 can coconut milk

Boil water with salt, and cook 16oz chick pea pasta following directions on package.

Place 6-8oz salmon skin down on baking stone. Salt and pepper over the top, additional seasoning as desired.

Bake in oven 425 until done, 4-8 minutes pending thickness. (It will be a light pink color when fully cooked.)

In large pot or skillet combine all other ingredients. Stir until heated (about 5 mins) and mixed well.

Remove salmon from oven and dice into bite-sized pieces., adding to chick pea pasta. Add sauce on top and mix well (gently!) Serve immediately - and enjoy!
